Since launching our new menu the Yeasted Chicken Breast main course has been a firm favourite with our diners. The fantastic chicken is sourced from award-winners Herb Fed near York. They are packed full of flavour and are hand-fed on, you guessed it…herbs, over 10 varieties! Not only that, the chickens are free-to-roam, kept in small flocks and eat a healthy crop of the delicious trimmings from very close-by, Herbs Unlimited alongside their natural cereal-based feed. Herb Fed is the only producers in the country feeding poultry on this diet and with having the opportunity to roam and eat natural food, the chickens have a fantastic taste. The birds also grow to a really good size making for very generous portions!
Our Executive Chef discovered Herb Fed when doing some research for new suppliers: “I found the farm on the internet when I was looking for a turkey supplier for the Christmas menu - which is where all of our turkey came from last year. They are a small family farm with great ideas and sustainability at the heart of everything they do. The herbs are grown by Alison Dodd, owner of Herb Unlimited and aunty to Ed Wilkinson at Herb Fed. It's a great example of farmers and families working together to create fantastic produce."
Those of you that visited the restaurant recently may have enjoyed our Yeasted Chicken Breast with Mushroom and Cranberry. With fresh seasonal produce ever-changing throughout the year, this fabulous dish is now served with Wild Garlic Spätzle & Leek – in case you were wondering Spätzle is small dumplings, consisting of seasoned dough poached in boiling water. It’s really delicious.
